Can you cook chicken in olive oil?

This is homemade chicken nuggets.It will probably be on med-high to cook the crumbed chicken, the recipe calls for "vegetable" oil, but I was hoping for a more healthy oil, can virgin olive oil stand this heat?

Not really optimum, but doable.Olive oil breaks down at a very low temp.It's only good for light sautes.But if they're very thin nuggets, you may be able to increase the heat some and get it done( careful not to burn the oil).I've done it before with thin chicken cutlets.

Yes you can use olive oil, but for high heat cooking peanut oil is the best by far, or for flavor, use plain lard.

Olive oil is ok - as long as you don't get it too hot, it breaks down after 375 degrees. If you were going to sub anything else - i would use Canola oil for the Omega-3s.Remember - no oil is a "health food" always use sparingly. Regardless if you use a 'healthy' oil or not - it still adds a huge amount of fat and calories while adding no vitamins, minerals or phytonutrients.

Best to skip the oil and bake the nuggets. They'll be crispy and low fat!

olive oil is better for lower heat - but canola oil is also very healty and takes the heat better.
