Stir fried ingredients dishes that cut into small pieces and can be picked up with chopsticks! Stir frying is a cooking method that invented by Chinese for more than 2000 years. This method is widely used in the whole China from north to south and from east to west. This method was solely used by Chinese for long until recent centuries that the other cultures adapted it and using it by frying pan or Chinese woks. The other few kinds of food would be wheat noodles in the north and rice, rice noodles in the south. There are a lot of items that I can write in here... Cantonese BBQ pork : Char Siu Cantonese roasted baby pig : Yu Chu Dim Sum : there are wide varieties in different places of China - wonton mein, siao lung bao, different kinds of dumplings, steamed black sugar cakes; red bean paste or lotus seed paste steamed buns, mooncakes, ... Sichuan Hot pot Beggar Chicken Beijing Duck Steamed fish (lots of different methods with different ingredients) Long boiled soup with Chinese herbs

definitely what is served in OUR chinese restaurants it is not. this is mainly adapted to pacify the western taste. dim sum, the little steamed dumplings, zhauzi, the steamed dumplings, Beijing duck and of course rice in all variations, even eaten for breakfast as rice kongee.

Go to a Chinese restaurant, and if the name doesn't right, then it's probably relatively authentic. Recognizable names like Lemon Chicken or General's Chicken are not authentic). If it sounds like "The Ant Climbs Up the Tree", then you're golden. A few great choices are steamed pork buns, like the other answerer said. There's also "Twice-Cooked Pork"(Sichuan) and "Peking Duck"(Beijing).
