Include plenty of fruit, and lots of vegetables. Things like spinach are very nutrient dense and contain a good amount of iron. If you feel you cant meet all your needs nutritionally solely on diet, you can always invest in a vegan vitamin supplement, although this should not replace your healthy eating habits and getting all your nutrients from diet alone is always the first choiceEdit: To contradict Cliff, I have to say that there is a brand of vegan ice cream that will blow your mind! My omnivorous(and not lactose intolerant) family ADORES it. It is Purely Decadents Coconut milk ice cream and is phenomenal. No one has to miss out on ice cream, vegan or not!

You can eat anything you currently eat, unless it has eggs, dairy, honey, or gelatin in it. There are quite a few other animal-derived ingredients you will come across, but those are the biggies.I highly suggest doing more research before jumping into this. I jumped right in and found myself quite weak for a few weeks until I did the research I should've done beforehand, and figured out what to eat, when, and how much, etc. Look up the Vegan Food Pyramid and that should give you something to start with.Foods that are staples in my house: Fruits. Vegetables. Pastas (some may have egg--Get used to reading ingredients if you buy prepackaged foods). Rice. Bread products (may contain eggs, milk, and/or honey. Like I said, get used to reading labels).From those, I can make countless vegetable dishes, pasta dishes; I can eat the fruit as a snack or add to the bread products (raisins on a plain bagel = raisin bagel without all the other garbage added! Peanut butter and bananas on bread = Yum!).You may want to look into picking up some Nutritional Yeast. Red Star makes a good tasting one. May have just been placebo effect, but I noticed a difference when I added it into my diet after eliminating all animal by-products.
