Help on all veggie meals!?

My husband is starting a diet similar to the Atkins Diet but a very condensed version. Another solider suggested this: 1 week of all meat/protein foods, 1 week of all veggie (small amounts of fruit), and 1 week of meat/protein. He lost 18 pounds and it really helped when he took his next pt test. Well, I am having trouble creating meals out of just veggies... Any help in this area would be great!

How about a veggie stew? Just add a veggie stock and salt and pepper (if liked) and you are on a roll! Also try roasted veg sprinkled with herbs, whizz in a blender and reheat in a saucepan.Hope I helped x

Not to rain on your parade, but I have read and heard lots of reports on the latent and long term very negative impact of this kind of diet on your health. I am sorry that I am not answering your question directly.

Stir fry! Julienne veggies, and put in a hot pan, stir around for a few minutes. don't cook them to mush, just enough to heat them through but they are still crisp. For flavor, you can use soy sauce, garlic, sesame oil, hell even BBQ sauce if that's what takes your fancy.Another option is to roast veggies in the oven, You've got your standard potatoes/sweet potato/pumpkin but you can also roast anything. Peppers are good, carrots, asparagus, anything! Roasting is best with a bit of oil rubbed all over the veggies, and some herbs, like rosemary. I personally roast a few cloves of garlic with my potatoes, for flavor, and then eat the roast cloves as well :)Remember on a diet, herbs and spices are essentially calorie free, so use them!
