Totally agree with four ounces per person BUT go to a catering butcher or cash and carry and buy turkey saddle or crown, it will be a bit more expensive but there is absolutely no waste and very easy to carve. I would also try and find a friendly butcher who would slice it on a slice, you get much more accurate slices and more to the pound.

Hi Suzy Q , In the catering trade we usually work on 6 ounces of meat 'on the bone' and 4 ounces of meat 'off the bone' as the turkey probably wouldn't be carved at the table I would work on four ounces per person. I will leave you to do the maths., because it really depends on the size of the turkey and if you were having it pre boned and ready sliced. Always order at least 10 extra portions to allow for extra last minute guests and as it all too often happens wastage. Your butcher will be only too glad to help you out. Four ounces may not seem a lot but do remember there will usually be trimmings as well.I hope that helps. All the best.Rab

Work it out at around two hundred grammes, uncooked weight, of turkey per guest..which comes to 30 kilos in all...Sainsbury have a four kilo frozen bird for just £10; and Lidl have a similar bird for a little less and I doubt that you could get anything better value if money is an object. Always make sure that you have at least ten percent more weight than you need, in fact I would go for twenty percent with such a large party..thirty-six kilos / twelve birds of 4 kilos or slightly over. If cooking space is a problem than you can easily get much larger birds but the price per kilo may be higher as well. make masses of stuffing in different flavours and a couple of mounds of sausages or sausage meat balls wrapped in thin slices of streaky bacon; the trimmings are more as important as the turkey after all.At a push you could work it out at one hundred and fifty grammes per person, and you will probably find this to be plenty, but it is always best to have too much than too little for guests and I would say that three ten kilo birds are the very lest I would try to do such a number of meals from. Before making your mind up, talk to your butcher and to the butcher at your local supermarket about quantities and give yourself plenty of time when it comes to the work..write a really detailed list to follow.
