First of all, I feel the manufacturer of the chicken plays an important role to tenderness. For example, Sanderson Farms and Country Pride Chicken provide outstanding quality. Pay attention close attention to whose product you are buying.Cook your chicken until the meat juices run clear when piercing with a knife near the bone (if bone-in) or pierce in the center if boneless. If you continue to have overdone chicken, take note of the total time you cooked it so you can reduce this time for your next meal. Learn by trial and error.

the best way to get a chicken super tender on the inside along with crispy skin on the outside is to do "beer can chicken".it doesn't have to be beer, either. i have used rinsed out soda cans with broth inside.the secret is, the chicken is cooked upright in the oven and the liquid in the can keeps the chicken moist, while the oven heat crisps the skin.i have my own rub, but you can experiment with flavors you like....i found this recipe online for you to start with... it has good instructional pictures, which is why i chose it.http://chickenrecipesplease.wordpress.co…upright is the only way i make whole chicken anymore.....

i think the same rule applies for all meats... there's 2 ways to get really succulent meats1 - bake in the oven with juices (for chicken, orange & butter is quite nice) and go in every couple of minutes with a spoon to pour the juices back over the meat. If you keep wetting it it'll be really nice2 - slow cook it in something like a tagine. Slow cooking doesn't dry out as much and the longer it cooks the more it'll turn into a buttery consistency which just falls apart when you touch it.

try cooking it slowly, like on a rotisserie. Also, use a meat thermometer to determine donness so it doesn't get overcooked

At the supermarket they sell those kind of bags (they come in a packet and they are not expensive) that you place the whole chicken in and cook in the oven.....you can find those bags at the aisle where they sell baking paper/aluminium foil....im not great at cooking chicken so by using this method your chicken will turn out nice and juicy :)

The most consistant tender or soft chicken I've had is from chinese restaurants. Apparently they "velvet" their chicken. http://chinesefood.about.com/b/2006/11/3… - This website explains it better than I do. However, chicken is usually pretty tender unless you overcook it.

Chicken should be cut iwth a butter knife. If you are cooking it at home and you can't cut it with a butter knife you are WAY over cooking the chicken.
