Melt the chocolate in a heatproof bowl over a saucepan of simmering water. (Alternatively, in a microwave safe bowl in on Medium/50% power, stirring every minute.) Holding the strawberries by their stalks, dip halfway into the melted chocolate. Transfer to the lined plate and refrigerate until set. Spray a frying pan with the canola cooking spray. Heat over a medium heat. Prepare and cook the pancakes according to packet instructions. Combine the ricotta and cinnamon. Layer 3 pancakes with one-quarter of the ricotta mixture on a serving plate. Repeat with the remaining pancakes and ricotta. Arrange the strawberries on the top of each pancake stack. Drizzle with maple flavoured syrup to serve.

Just a tip, Whichever mix you use and bbc.co.uk/food will give a good recipe, Cool in fridge and just before using add a few ice cubes to the mix. This will make the pancakes lighter.Try not to get ice cube in the pan tho', when cooking.

Rose's World Famous Pancakes2 eggs 1 cup milk (I prefer buttermilk) 1 cup flour 1 tablespoon baking powder 1 teaspoon sugar 1/2 teaspoon salt 1 Preheat griddle. 2 Beat eggs and milk together. 3 Add dry ingredients and beat well. 4 Pour on griddle. 5 Cook until bubbles appear and flip over. Smiley Face Blueberry Banana Pancakes1 cup flour 2 teaspoons sugar 2 teaspoons baking powder 1/2 teaspoon salt 1 egg 1/3 cup mashed ripe banana (1 medium) 2 tablespoons oil 3/4 cup milk 1/2-1 cup blueberries 1 Stir first four ingredients in medium bowl. 2 Make a well in the center. 3 Beat next four ingredients in a small bowl. 4 Add to well. 5 Stir until just moistened. 6 If you are adding the blueberries to the batter, fold them in now. 7 Pour 1/4 cup into non-stick frying pan for each pancake. 8 Cook for about 30 seconds. 9 If you did not add blueberries to batter, arrange blueberries on pancakes in a happy face. 10 Turn pancakes over when edges start to dry and bubbles break on the surface. 11 Cook until golden.Enjoy and hope I helped!
