Marinating tofu in curry sauce?

So the curry sauce I'm marinating my tofu in is a bit thick.I planned on putting it in the freezer or fridge after marinating it, how long should i marinate it for then?Is it true that the longer i marinate it for, the more the curry taste will penetrate through the tofu?thanks!

Well, my experience with marinating tofu is that it really doesn't absorb much flavor into the tofu itself, because the water content of tofu is so high. The marinade coats the outside but is not really absorbed inside. To better flavor tofu with a marinade, you have a few options:1. Dice the tofu in relatively small pieces, like 1/2" squares. That way you have more surface area to hold the flavor.2. Bake the tofu uncovered in the marinade until the liquid in the marinade evaporates. The flavor will stick to the tofu more that way.3. Freeze the tofu first, then thaw it and squeeze out the water. The texture will change entirely and become more like a sponge. Now marinate the thawed tofu, and it will probably pick up more of the flavor of your marinade. It may not be a good idea to refreeze it at this point, though. Most foods should not be re-frozen after thawing.
