Here are a few ideas, a peach cobbler would also go over really well and don't forget beverages, no southerner doesn't like home-made sweet tea:DOWN-HOME BISCUITS(Southern Buttermilk Biscuits) * 2 cups soft winter wheat flour, such as White Lily, unsifted or 1 3/4 cups regular all-purpose flour * 4 tsp. baking powder * 1 Tbsp. sugar * 1/2 tsp. baking soda * 1/2 tsp. salt * 1/4 cup shortening * 3/4 cup + 2 Tbsp. buttermilk Preheat oven to 450 degrees. Mix dry ingredients. With pastry blender or 2 knives, cut in shortening until crumbly.Make well in center of flour; pour in all buttermilk, tossing gently with fork until flour is just moistened. Do not overmix. Dough should be very sticky. Turn dough out onto floured surface; with floured hands, knead very lightly once or twice. Pat dough out evenly into 3/4" thick round. Cut out biscuits and place on ungreased baking sheet. Gather dough scraps and repat, cut out biscuits. Bake 12 minutes or until golden.Variation: SPICY CHEDDAR AND SCALLION BISCUITSAdd 1 cup finely shredded sharp cheddar cheese, 1/3 cup chopped scallions, and 1/4-1/2 tsp. hot red pepper to dry ingredients and mix well. CANDIED YAMS * 4 medium sweet potato * 1 cup sugar * 1/8 teaspoon salt * 6 Tablespoons butter * 1 Tablespoon flour * 1/4 cup water Peel and cut potatoes as for French fries. Place in 9 X 13" baking dish.Cover potatoes with sugar and salt. Cover with pieces of butter. Sift flour evenly over potatoes. Add water. Bake in 400 degree oven for 1 hour or until potatoes are done and sugar and butter have made a thick syrup. Bast potatoes frequently with syrup while cooking. A Southern treat!NOTES : A little cinnamon may be added with flour if desired.VILLA MONTANA BAKED HAM * Pre-cooked boneless ham such as Cure 81 * whole cloves * 1-1/2 cups brown sugar * 2 cups pineapple juice * 1 Tbsp. dry mustard * 2 cups diced fresh or canned crushed pineapple * bottle of ginger ale (1-2 liter) Stud ham with cloves. In blender container (or food processor if no blender), place the sugar, pineapple juice, crushed pineapple, and mustard. Blend but do not puree.Place ham on rack in roasting pan. Pour pineapple mixture over ham.Bake for one hour at 350 degrees. Lower heat to 300 d. and bake for 2 hours. As juice in pan boils down (check after first hour), begin to add ginger ale as needed. Baste ham every 15 minutes for last hour, adding ginger ale as needed. This is the secret to the wonderful flavor! For the last 30 minutes of cooking, remove rack and place ham in bottom of pan.
