They have these awesome chips there called Zapp's in cool cajun flavors like spicy crawtator. Or if you're looking to make something you could try Boudin Balls, Nachitoches Meat Pies those are the only snack type things I can think of. For the boudin balls you can buy boudin sausage at the store, remove it from the "skin" or casing, then roll it in bread crumbs and deep fry it. The food of Louisiana is basically a mix of French & American South. With some Cajun mixed in. They're noted for their fish preparations and very spicy cuisine. A Good Louisiana snack is 'pralines'. Which is a very simple walnut cookie. Delicious.

New Orleans Louisiana Snack Recipe This is super easy to make especially if you use microwave popcorn, and it's truly addicting. But don't be fooled—the caramel corn may not seem too spicy at first, but it will certainly sneak up on you. like . Cajun Caramel Corn - makes approximately 4 cups - For the Old-School Popped Corn: 1/2 cup popcorn kernels 1 tablespoon vegetable oil Or substitute with 1 bag plain microwave popcorn For the Cajun Caramel Topping: 4 tablespoons unsalted butter 2/3 cup brown sugar 1/4 teaspoon cayenne pepper 1/4 teaspoon sea salt 1 tablespoon + 1 teaspoon corn syrup 1/4 teaspoon baking soda Procedure 1. Before you begin the popcorn, preheat oven to 350°F. 2. Over high heat, warm the oil and one kernel of corn. As soon as the kernel pops, add the remaining kernels and cover. 3. Reduce heat to medium and listen. Once you can count to "1-2-3 Louisiana" without hearing a pop, remove the pot from the heat and pour popcorn into a large bowl. 4. Once cool, toss popcorn so any unpopped kernels fall to the bottom of the bowl. Transfer the nice popped corn into another bowl and discard unpopped kernels. 5. In a small pot, over medium heat, cook the butter, brown sugar, cayenne, sea salt and corn syrup until it just begins to bubble on the sides. 6. Remove the pot from the heat and whisk in the baking soda. Slowly pour the warm caramel over the popcorn while stirring gently. Continue to stir the popcorn until well-coated. 7. Spread the caramel corn onto a large baking sheet. Bake for approximately 8 to 12 minutes or until the caramel just begins to darken. Be sure to stir around the caramel corn once, after the first six minutes or so of baking. 8. Let cool to just about room temperature. Ingredients * 2 lb peanuts in shells (raw/not roasted) * 6 T salt (add to taste) * 1 T red pepper flakes (add to taste) * 1 T red pepper powder (add to taste) * 2 T red hot sauce* (add or reduce according to preference) * 3 q water (more can be added) Instructions Clean and wash the fresh raw peanuts in shells. Take a pressure cooker or large pot and soak the peanuts in water and add salt according to taste. Next add the red pepper flakes and hot sauce. Let it cook till they are soft. Pressure cooking will save a lot of time, as against boiling them in the pot. If you don’t have a pressure cooker, use a large pot which has a lid with a small vent. Check for saltiness and spiciness while it’s cooking, add more if required. If the nuts are fresh they absorb the spicy easily, but if they are not so fresh, it takes more salt and spice to penetrate the shell. Remove from the pot or cooker just before it’s served. The spicy-salty boiled nuts taste better when warm. Important tip: If the peanuts are not fresh and shells look hard the salt and spice does not get well absorbed. Jambalaya, gumbo, boiled craw fish, boiled peanuts. Fried everything, including things like pickles. King cakes during mardi gras. Red Beans and Rice, with corn bread on the side is another one. Okra is a southern staple as well. Hurricanes are the alcoholic beverage they are known for, plus daiquiris (they go as far as having drive-thru daiquiri stands down there). Sorry, snack food...hush puppies (deep fried corn bread balls). Try the fried pickles as well, they are really good. The boiled peanuts are pretty good as well. You just boil peanuts with seasoning (whatever you prefer) in water.
