What happened to my Sushi?

I took some sushi to school with an ice pack to keep them cold and safe to eat but they went all chewy dose any one know what i did wrong. (i followed the instructions on the back of the box)

I am thinking since it is a prepacked kit of some kind that there maybe stabilizers in some of the ingredients. Sushi made homemade would tend to be on the mushy side after traveling - even with ice packs.
