What is a good vegan brunch dish that can be served cold?

I offered to bring a brunch dish to my mother-in-law's Easter party, and I usually try not to bring anything that will need space in her oven to warm up. What would you suggest? I prefer that it be something sweet, but I'll take any suggestion.

Vegan Apple Carrot Muffins:Ingredients1 cup brown sugar1/2 cup white sugar2 1/2 cups all-purpose flour4 teaspoons baking soda1 teaspoon baking powder4 teaspoons ground cinnamon2 teaspoons salt2 cups finely grated carrots2 large apples - peeled, cored and shredded6 teaspoons egg replacer (dry)1 1/4 cups applesauce1/4 cup vegetable oilDirectionsPreheat oven to 375 degrees F (190 degrees C). Grease muffin cups or line with paper muffin liners.In a large bowl combine brown sugar, white sugar, flour, baking soda, baking powder, cinnamon and salt. Stir in carrot and apple; mix well.In a small bowl whisk together egg substitute, applesauce and oil. Stir into dry ingredients.Spoon batter into prepared pans.Bake in preheated oven for 20 minutes. Biscuits and chocolate gravy! You will want to warm the gravy before serving, but you can just heat it for about 20-30 seconds in the microwave. The biscuits can be warmed in the microwave before serving too if desired."Buttermilk" BiscuitsMix and set aside to curdle:1 cup very cold soymilk or almond milk1 tsp vinegarMix together:1 cup all-purpose flour1 cup whole-wheat pastry flour2 1/2 tsp baking powder1/2 tsp baking soda1/2 tsp saltAdd to this:5 tbsp transfat-free vegetable shortening (like Crisco) or very cold vegan "butter" like Earth Balance, chopped into small cubes.With a fork or a pastry-cutter, mix the fat into the flour until you have a coarse mixture with no large pieces of fat. If using "butter," work quickly because you don't want the fat to melt.Now add the curdled soymilk-vinegar mixture and mix quickly until the dough comes together.Make a ball of the dough, cover with plastic wrap, and refrigerate for 15-30 minutes.Now take the dough and roll it into about 1/2-inch thickness. Use a round cookie cutter about 1 1/2 to 2 inches in diameter to cut the biscuits.Place the biscuits on an ungreased cookie sheet.Reroll any leftover scraps of dough to cut more biscuits from it.Brush the tops of the biscuits with a mixture of 1 tbsp soy milk and 1 tbsp canola or other vegetable oil for a nice, golden-brown glaze. Using a whisk blends everything better than a spoon. Stir in the milk. Cook over medium heat stirring constantly (this is important because it can burn QUICKLY). Remove the pot when the mixture thickens a bit. Add the margarine and stir in until completely melted. Serve over biscuits.
