What kind of Italian dish?

Alright so I really really love italian food and want to make an italian dish for dinner tonight. BUT I don't really want to do spaghetti and I don't have the right cheeses for lasagna. I have ground beef thawed and lasagna noodles I have tomato paste, sauce, and diced tomatoes. Basically I need a yummy easy italian recipe that doesn't call for a bazillion different kinds of cheese and fresh diced garlic cause I don't have that. And it's storming here, I'm not about to drag my daughter out in this to go to the store. So shortcuts and substitutions are welcomed!

Here are ten recipes for lasagna noodles. You won't have all the ingredients for the mushroom one or the squash one, but the Bologneses sound good: http://www.barillaus.com/Pages/recipesea… Remember, you can also cook the lasagna noodles, then smear your tomato sauce over them and roll them up lengthwise. That's called rotoli. Pour more sauce over them, add some Parmesan if you have it, and bake until piping hot!

You can make a lasagna roll - stuff it with a basic ragu made using the ground beef. For the ragu, dice some onions, carrots (if you have them) and season the beef with salt and pepper. Fry the onions and carrots in some olive oil, add the beef and brown stirring it around. Finally add the sauce and diced tomatoes (optional), if you do add the fresh tomatoes your sauce will be more runny, and you'll have to reduce it or add some flour or corn starch to thicken it up. Tomato paste can also add flavor if you feel its too watery. Throw in any herbs you have: basil, marjoram, thyme, oregano, parsley, and bay leaves all work. Let the sauce simmer for an hour at least. Cook the lasagna noodles according to the instructions, then lay them out, line with the beef sauce, sprinkle some cheese on and roll them up. Place them in a baking pan and surround them with the rest of your sauce. Bake in a medium oven for 20-30mins. Also, you can use garlic powder in the sauce if you don't have fresh garlic.
