Presuming you have no dietry issues the first thing that sprang to mind was Spanish omlette:Par boil the potatoes & cut up V small & place in a large frying pan with a little oil & a dab of butter,Add any veg that you fancy (peas, mushroom, fresh tomato & sweetcorn all work equally well),Pour over it the pre-made omelette mix & cook as normal.Enjoy, actually, I think I've just talked myself into going & having 1 too.

baked chickenhere r a couple of the easiest but best recipes my family just LOVES.pre-heat over to 350put chicken in baking pan and smother with italian dressing for extra flavor sprinkle parmesan cheese on top. YUMMY cover tightly with foil, throw it in oven for about 2 1/2 hours and u have your self a delicious meal the chicken just falls apart when u touch it with a fork. enjoynow if u want the same delicious meal that falls apart when u touch it with the fork do all the same steps above but instead of smothering in italian smother with a bottle of bar b que sauce. cover and cook 2 1/2 hours and tah dah dinner is served and your family will be happy

when i need something quick (and i'm veggie also) i just make pasta with chilli oil, grated cheese, sweetcorn and veggie meatballs. And some terragon. Or replace the grated cheese with a cheese sauce which you add pepper to (and some madeira if you've got it). You can even replace the meatballs with mushrooms or brocolli, or chopped veggie frankfurter.

you should make grilled/ pan grilled salmon or chicken breast seasoned with sea salt or any salt and lemon prior to cooking.. couscous is really cheap and a quick side dish to make, like five minutes. boil 1.25 cups water and garlic then add sauted bell peppers if you like, its not needed then add the couscous (1 c) and remove from heat and cover... will be ready in five minutes. then just make some broccoli and carrots in the microwave.. slice carrots and cut broccoli into bite size pieces, then toss in olive oil until lightly coated and then cover with plastic wrap and microwave for 3-5 minutes. voilla!
