What to do with all these eggs!?

We have chickens and right now we get around 8 eggs a day. At the end of the summer we will be getting around 20 a day. We share with neighbors and friends, but we still end up with a lot. Due to health reasons, my doctors really suggest me eating an egg a day (how perfect), but I HATE eggs. What are good recipes to use when cooking eggs? I'd just be cooking for myself, and it'd be for breakfast and lunch.

you could make a lot of cake and other deserts that you don't taste the egg in. omelets and scrambled eggs are pretty good for a nutritional breakfast. tell your friends and neighbors to give them to their other friends.

That's a lot of eggs!After sharing with friends and neighbors, maybe they can share some with their other friends too. Also consider the possibility of selling some of those eggs at the local farmer's market or something because people will pay to buy fresh eggs.I know there is only so much you can eat and do with eggs (omlettes, egg salad, sandwiches, etc...), but also think about baking. Many baked goods require eggs and can be frozen for later use. I know I like to make brioche dough (which is versatile and can be used to not only make rolls and loaves but also sticky buns and the like), which requires eggs and the dough is great for freezing and later use for fresh bread when you want. Also consider cakes and cookies to use up the eggs.

Egg sammich, egg soup, egg stew, egg gumbo, egg and potatoes, egg salad, egg and shrimp.You can bake it, sauté it, deep fry it, broil it, fry itThats about it

Firstly you have omelettes. You need 2 eggs and whatever you want in it. Cheese is the yummiest though. Just mix the 2 eggs in a bowl and pour in the pan cook for a minute then turn over sprinkle the cheese on top and foldover cook for a further minute til cheese is all melted. Also add ham, onions anything!Boiled egg and soldiers :)Yea the egg samwich is always nice!

Well you could consider selling them, or giving them away. Bring them to a food pantry or something. Maybe to like a soup kitchen that gives food to people who cant afford any.But, dont just simply throw them away.Heres a good egg recipe site:http://allrecipes.com/recipes/breakfast-…

i LOVE eggs benedict though i hate eggs normally. Just poach an egg in water with some vinegar, put it on a french stick / thick toast, pour over a creamy hollandaise with some lemon juice, sprinkle some terragon. Nomnom!If you really need to eat eggs, experiment with ommelettes. A truffle ommelette is supposed to be gorgeous and you can buy them relatively inexpensively in supermarkets as mini truffles in a jar. Asparagus & bearnaise sauce should work nicely on eggs with french stick. Or just with bacon. Or asparagus & parma ham. Or some whiskey-flambeed mushrooms (sliced, not quartered, to fill out the egg better). Or prawns. Just a tip... i always add lots of peper and a bit of cream to make my omelettes nicer. Chili oil or garlic oil never go amiss either.a spanish recipe says you can finely slice potatoes,arrange them in a pan with some butter (sort of like a potato gratin but in a pan rather than the oven), pour over some mixed egg & cream & pepper + salt & garlic, then allow to bake into a thick potato egg pancakemake some toast, steam some asparagus, dip both in runny egg. If you have a local farmers market, you might consider selling them. I wish I could buy fresh eggs from my farmer's market, and I bet people around you do too. I love to eat hard boiled eggs. You could make egg salad. You could bake cakes, cookies, and any other delicious treat.
