What's the simplest recipe you could do with an avocado?

Simply halve, remove stone but leave the skin, and eat with a spoon. You can fill the hole with any salad dressing that takes your fancy. Plain yoghurt mixed with salt, pepper, a squeeze of lemon juice and some chopped chives is refreshing and stops the avocado discolouring.

This recipe has been adapted from a very old Sifto Salt recipe booklet. It is absolutely the best Guac I've ever had!!Ingredients2 Tbsp.finely chopped onion2canned jalapeno pappers, finely chopped¼ cupchopped fresh coriander leaves (or 1 1/2 tsps dried or 1/2 tsp ground per 2 avocados)2ripe California avocados, coarsely mashed1tomato peeled, seeded and choppedsift salt to taste3tbsp. fresh lime juiceInstructionsMix all ingredients together. Serve as a dip with corn chips or fresh vegetables. Also great as a topping for baked potatoes or burgers.N.B. Place an avocado pit in the centre of prepared guacamole to help prevent browning.Makes about 1 1/2 cups.*Large avocados are recommended for this recipe. A large avocado averages about 8 ounces. If using smaller or larger size avocados adjust the quantity accordingly. o_O

Season with salt and pepper and drizzle lemon juice over the top.My favorite: Cut the avocado in half. Remove the pit. Sprinkle with lemon pepper seasoning. Grab a spoon and go for it.For me avocado was an acquired taste. But after being introduced to guacamole about 40 years ago, I acquired the taste. I do love avocado.

You could make a turkey bacon swiss avocado sandwich with mayo and toasted bread. Toast the bread spread mayo on it cut the avocado and put it on the mayo (you will probably have enough avocado for two sandwiches) then put the turkey and swiss on the toast make the bacon and when it is still hot put it on top of the cheese so it gets a little melted. Place the other piece of toast on top and you have got yourself a tasty lunch.
